Hello and welcome!

My name is Paige, and I’m a high school senior from Los Angeles currently living in the south of France.

I started Rise and Bake in January 2017 to document a school project I’m doing on bread, its origins, cultural significance, chemistry, and evolution. Over the course of a semester, I’ll be interning at local bakeries, learning about bread through books and documentaries, and experimenting with making my own bread at home. In my exploration of one of the world’s oldest staples, I hope to answer questions such as:

  • When and where were the first breads made?
  • What is the chemical composition of bread?
  • Is bread healthy?
  • What role does bread play in politics and vice versa?
  • How has bread evolved over the last century?

When I’m not eating bread or baking, I can be found curled up with a good novel, playing the piano, or hiking in the woods behind my house.
